Nigerian Bun

Ingredients

• 600 g flour
• 1 c water
• 3 tbsp melted butter
• 2 tsp salt
• 1.5 tbsp baking powder
• 5 tbsp nutmeg powder
• 400 g sweetened condensed milk
• ~2-4 c veg oil (for frying)
• 2 eggs, beaten

Process

• combine flour, salt, nutmeg, baking powder
• add butter, condensed milk, eggs and combine
• Add water and milk and combine dough - it should be stretchy & sticky
• over medium heat, add vegetable oil and allow to come to temperature
• add balls of dough, about 1-1.5in diameter and fry at the medium-low heat for about 15-25 minutes
• frying at higher heat will cook the outside but not the inside
