Cucumber Pickles

Yield: ~1/2 gallon pickles
Ingredients
- 1/2 gal pickling cucumbers
- 1.5 c vinegar
- 1 c water (or tea, cider, flavored liquor, etc)
- 2 tsp salt
- some pickling spices (black pepper, curry, ginger, fresh herbs, turmeric, garlic, peppers, masala, mustard seeds, onion, etc to taste)
Process
- Prepare jars for canning
- Prepare the brine:
- combine water, vinegar, salt, and spices in a saucepan. Bring to a simmer
- Wash cucumbers, trim and chop as needed (into spears, chips, removing leaves, etc)
- Add cucumbers to hot sanitized jars, leave about 1/2 in headroom
- Pour brine over pickles and remove any air bubbles
- add lids and seal for at least 15 minutes
- Pickles should be shelf stable for around 1 year
