Pick and wash prickly pear heads, removing any dirt or bugs
Place the heads in a cookie sheet. Using a propane torch, burn off the remaining prickers, flip and repeat.
Prepare jars for canning (sanitize in boiling water)
Cut off the hard/brown ends and cut heads into halves or quarters and place into large pot
Cover with water and bring to a boil (add raspberries here if desired). Allow to steep for 2-3 hours
Strain liquid (tea) into a bowl. There should be at least 1.5c (if there is not enough, add water until 1.5c, it's fine if there is more)
Combine tea, lemon juice, sugar, and pectin in a large saucepan
Boil until the setting point is reached (cold spoon method, otherwise I just eyeball it)
remove from heat
Stir in some flesh from the pears or berries (optional, but makes it look nicer)
Pour into hot jars, leave the lids off
After 20-30 minutes, if a white skin has formed at the top, scoop it off with a spoon and microwave it (the white is air bubbles, microwaving releases them). If the petals are at the top, stir to redistribute them
After stirring, put on lids and finish cooling upside down. The lids should be popped in.

Use a pair of tongs to handle the unprocessed heads to avoid getting pricked
