Ingredients

• 1 c flour
• 1 tsp baking powder
• 1/4 tsp salt
• 2 eggs
• 1 tsp vanilla extract
• 1/3 c cold water
• (2 | 1/4 | 1/3) (tbsp | c | c) evaporated milk (single | double | triple topping)
• (6 | 3/4 | 1) (tbsp | c | c) brown sugar (single | double | triple topping)
• (3 | 6 | 1/2) (tbsp | tbsp | c) melted butter (single | double | triple topping)
• (1/2 | 1 | 1 1/2) c coconut (single | double | triple topping)

Process

• Cake:
• Sift flour once. Measure and sift flour 3 times with baking powder and salt
• Beat eggs until light using medium speed of miger
• Turn to low speed and add sugar gradually
• Add vanilla
• Add dry ingredients and water alternately to egg mixture
• Bake in greased 8x8x2 pan at 350F for about 40min
• Frosting:
• Place frosting ingredients (evaporated milk, brown sugar, melted butter, coconut) in saucepan on low heat until dissolved
• Put frosting on cake and cook under broiler until bubbling but not brown
