Grandma's German Potato Salad

Ingredients

• 4 lb potatoes
• 3/4 c vinegar
• 2 tsp salt
• 1 c water
• 1/2 lb bacon
• 2 tbsp flour
• 1/2 c sugar
• 1/2 tsp pepper
• some green and red pepper for garnish
• 1 medium onion

Process

• boil potatoes, cool slightly, peel and slice to desired size (I like halves ~1/2in thick)
• cut up and fry bacon, strain and set aside
• Chop and saute onions in grease, then stir in flour
• add vinegar, water, sugar, salt and pepper
• cook until blended and slightly thin, pour over potatoes while warm
• set in low oven to warm, can be eaten cold too
• garnish with bacon and red/green peppers
